Posada de la Villa
Back in the 17th century, in the Cava Baja, there was the only flour mill in Madrid, which in 1642 became the first Inn of the Court, under the protection of the Arab walls, where food and lodging was given to all travellers arriving in Madrid. In 1980 it was rescued after two years of meticulous restoration, by a lover of Madrid and the hotel trade, Mr. Félix Colomo, so that it could continue to stand and was transformed into the current roasting oven, specialising in traditional cuisine, such as its cocido madrileño made in a clay pot over the ashes of straw and oak logs, or the suckling lamb roasted in a clay pot in the old Arab oven. The Posada de la Villa has hosted many well-known personalities from the worlds of politics, culture, art and sport. Its chairs are inscribed with the names of all those who have enjoyed the excellent food at the Posada.
In 1642 the only flour mill in the Villa de Madrid became the first Posada de la Corte under the protection of the Arab walls.
